Japanify: Daikon-Tuna Stir Fry

by yoko

IMG_2320

Sometimes the most humble ingredients can yield some seriously satisfying results. Some days I procrastinate until the last stop on my train to plan out what I’m going to make for dinner. I mentally piece together what I have in the fridge and try to make a meal out of it… kind of like how I mentally piece together my outfit for the day in the shower.

Japanify: Mizuna Crunch Salad

by yoko

photo (2)

Spring is here and my local market is starting show signs of different colors of the rainbow after a winter abundance of orange and brown fruits and vegetables. I’ve been most excited about the appearance of more greens — broccoli, asparagus, green onions, etc. The bulk greens sections has also been exploding and the appearance of fresh, healthy mizuna has prompted me to concoct a salad that takes advantage of its availability.

Japanify: Mentaiko Rice Redux

by yoko

DSC_0342

Forgive me, I am going to cheat a little here… like that “100 Episodes of Seinfeld” episode. I think Umami Mart has been around long enough for something like that. So this is a re-post/interpretation of another post I wrote in Tokyo 4 years ago.

The other day I got a tray of mentaiko (spicy cod roe) from my mom and all week Washi and I were dreaming of making the mentaiko rice recipe.

MOTOism: Ghetto Gourmet: Ramen della Carbonara

by Moto

Ramen culture has finally reached America. In New York, when it rains, it rains cats and dogs. There are so many new places opening up and I already lost count. Tonkotsu, shoyu, miso, there is so much variety. Plus, American-owned ramen places serve innovative dishes that are more like soupy pasta than ramen.

Thanks to the boom in gourmet ramen culture, instant ramen has vastly improved in quality as well.

Lazyass Cookin’: Mapo Tofu

by Kayoko

Life is busy these days. With the shop in full holiday swing, it’s hard to find time to cook. But Yoko and I are good about taking turns bringing bentos — it’s nice to take the time to plan out what to make next. The key is to make a big vat of something so it can stretch out past just lunch (since finding time to make dinner is also challenging).

Japanify: Negitoro Don

by yoko

I am posting a recipe for negitoro donburi for the pure fact that this is the most delicious thing to make in under 5 minutes if you have cooked rice on hand. If your fish monger sells toro pieces for cheaper, grab the opportunity to make this dish. If pieces of toro are not available, you can always settle for tuna pieces.

ReCPY: Lazyass Sakuramochi (And Failures from Cutting Corners)

by Moto

IMG_0691

In Japan, everything is made easy for busy housewives who have to raise kids, clean the house, yet also have to cook and make dessert. You throw things in a microwave and five minutes later, you can a serve main course to your hungry kids and demanding, asshole husbands.

I was recently given a simple-to-make sakuramochi kit. With sakura blossoms everywhere right now, this dessert is very springtime-y.

Lazyass Cookin’: Curry Udon

by Kayoko

DSCN9991.JPG

As we continue to celebrate the almighty noodle here, I give you one of my most delicious, yet absurdly lazyass recipes in my repertoire: curry udon. I love making Japanese-style curry in the winter, it is so soul-warming, with all the carrots, onions, meat and potatoes. But living alone means getting bored of having the same meal over and over for breakfast, lunch AND dinner.

Lazyass Cookin’: Natto Omelette

by Kayoko

DSCN0011.JPG

I have missed writing this column, so I’m bringing it back! I can not pretend that I have abandoned my lazy ways, or that I’ve stopped cutting corners when cooking. My kitchen may be much bigger than what I had in Brooklyn, but this only means that I can spread out my laziness over more counterspace.

Today, I bring to you a lovely lazyass recipe given to me by my sweet friend Moet, in LA.

Skankynavia: Bacon Udon

by Anders

Enjoying the early winter so far? I know I am.

I’m a cave bear and enjoy spending the long Scandinavian winter evenings in my studio or couch, working, crafting or watching Daria. In fact, since it is so windy, wet and utterly, depressively dark, I feel less bad about not hanging out on the beach, not frolicking around in the sun or not jogging around the lakes that I live nearby.
