Why would one double brew a soy sauce? To get a richer flavor and thicker texture than regular soy sauce. You would think that this makes for a more concentrated saltiness, but the opposite is true – double brewing actually rounds out the flavor and creates a rich profile that is best enjoyed straight, as opposed to cooking into something. Use this soy sauce in dressings, on sashimi, savory mochi, ice cream or grilled meats.

Yugeta Shoyu hails from Tawame in Saitama Prefecture. They use traditional shoyu-making techniques and only use wheat and soybeans grown in Japan.

Yugeta Shoyu has been making soy sauce since 1923 just outside Tokyo in a village called Tawame, Saitama Prefecture.  Today the company is run by fourth generation Mr. Yohichi Yugeta, who is keeping alive traditional shoyu (soy sauce) making.  Yugeta Shoyu’s soy sauce is brewed naturally and uses only Japan-grown wheat and soybeans.Please refrigerate after opening.
