If this were a sake, we'd call it a nama as it is bottled right before primary fermentation is complete. Nanyo Cider is made from apples and pears grown locally in Nanyo City, "pumping over" twice a day to keep the macerated fruits saturated. Get a nose full of juicy fruit yet dry on the palette. Enjoy this bright and crisp cider with natural bubbles and all!
We are very excited to carry these hard-to-get ciders and wines from Grape Republic, a winery established in 2017 that specializes in making natural wines made with grapes ripened in Nanyo City, Yamagata Prefecture. Their mission is to create wine from the high quality grapes that grow in Nanyo City and cultivate a community of new farmers and wineries to revitalize abandoned farmlands in the Yamagata countryside. A point of pride for their production process includes terra cotta Amphora pots imported from Spain which results in a more “more viney expression than the grape itself."
