This is is unlike any honjozo (sake with distilled alcohol added, which tend to be silky and light), we've tasted before. That may be because we also rarely see honjozos that are nama muroka genshus (unpasteurized, un-charcoal filtered, undiluted). It's fully-layered with grapefruit and pear on the nose. The taste is also complex and rich, with earthy and vegetal hints of enoki mushroom and a dry finish reminiscent of goya, or bitter melon.

Naohiko Noguchi is a legend in the sake-making world. Working 70 years as a toji (brewmaster), he opened the Noguchi Naohiko Sake Institute in 2017 to further the craft of sake-making for future generations.
