Copper Tamago Pan

While we visited the Asahi factory in Niigata, Japan in early 2014, to meet the workers and tour the facilities, we fell in love with these copper tamago pans! Why cook with copper? Not only is it beautiful on the stove, but it is a popular choice among chefs for its superior heat conductivity.
Whether you want to perfect the tamagoyaki or simply saute some vegetables, this pan is a nice, compact size for stove-top frying.
To season the pan, generously apply 2-3 tablespoons of oil into the pan so it coats the inner surfaces. Heat on medium high for a 2-3 minutes, making sure it gets hot. Turn off the heat and wipe off with a paper towel. Dry thoroughly and the pan will be ready to use.
General upkeep and cleaning:
Clean the pan with soap and water. The pan also comes with a small bottle of polish, which you can apply if you wish to minimize the patina that will occur since it's real copper. You can simply apply on a soft cloth and polish.
