Sake Gumi

If you've ever had a dish that describes its spice as "numbing," one of its ingredients is most probably sansho, or Japanese pepper.

Sansho are tiny pods that grow on small trees or bushes – there is a citrusy zest at first, but use sparingly or else your tongue will go numb! In Japan, you'll most commonly see sansho sprinkled over grilled eel dishes or yakitori.

We love this packet of freshly ground sansho directly from Japan, for its quick zip and tang. It's great on grilled meats, and when used in sauces and marinades.
