By gum, you gotta try this gum syrup from Berkeley-based Small Hand Foods, made by bartender, Jennifer Colliau! Also known by its French spelling gomme, this is a rich syrup made with gum arabic, a resin from the Acacia tree. Back in the day, gum syrup was commonly used to sweeten cocktails, but eventually, bartenders started to favor simple syrup, because it's both easier and cheaper to make. But there's a reason gum syrup was popular in the first place. Sweetness aside, gum syrup adds a silky viscosity, richer mouthfeel, and weightier texture to cocktails that cannot be beat.
