This rare bottle of kimoto muroka genshu is made with Omachi rice harvested from the Uemura field, a pesticide-free rice paddy. This rice is produced by sustainable farming methods including using fermented rice bran compost and using no pesticides or chemical fertilizers. Because of these natural methods, harvest is unpredictable, with some years failing completely.
This sake has been aged for five years which mellows out the flavors in an otherwise high-alcohol sake. Notice the golden hue while enjoying the silky texture, and aromas of cream cheese, and dried fruit. Sip this sake in a brandy glass.

"From our own fields to bottle" is the motto of Oka Hiroaki, President of Akishika Shuzo, who only use rice grown from their own 25 hectares of biodynamic farms to brew their sake.
