The label on this sake is striking – depicting a mountain while incorporating the kanji for mountain, or yama. The yama refers to the fact that it is brewed using the yamahai style (which involves natural occurring lactic acid). This results in sake that is earthy and high in acidity. Yama delivers in the acidity department and finishes very dry. 
Try this sake warm or at room temperature to enjoy aromas of hazelnuts and yogurt.

"From our own fields to bottle" is the motto of Oka Hiroaki, President of Akishika Shuzo, who only use rice grown from their own 25 hectares of biodynamic farms to brew their sake.
