Brooklyn Kura continues to impress with their latest (and second ever) Junmai Daiginjo. For Catskills (which is named for its water source), they used 100% Yamada Nishiki, and didn't let the fermentation go above 11°C. This luxe sake is a reflection of what the brewery’s mission is, “We want people to be able to experience the skill and craftsmanship that goes into sake making.” Enjoy this sake chilled in a white wine glass with bruschetta or fried calamari.
