Asahi Shuzo's mission was simple: to make a sake that was above and beyond their world-renowned Dassai 23. They named the resulting sake Dassai Beyond.
The founder of Dassai, Hiroshi Sakurai, got the best of the brewery's craftsmen together to figure out how to improve on their flagship sake. They knew it would be more than just polishing the rice further or using the most expensive ingredients. For 10 years, they tried, but they were never satisfied.
Finally, they released Dassai Beyond with full confidence. So what did they do to get beyond Dassai 23? We shall never know, as the brewery keeps the process of making Dassai Beyond under lock and key. What we do know is that this sake has a one-of-a-kind texture: smooth, silky, and with an even longer and complex finish than Dassai 23.
