Sake and Shochu Gumi

Featuring seven of Miyagi's most influential breweries, this bottle busts onto the scene with a label that captures the energy and fluidity of this collaboration sake. Each of the seven of the breweries (Yamawa, Niizawa, Urakasumi, Hagi no Tsuru, Katsuyama, Suminoe and Koganesawa) takes on a step in the brewing process, resulting in a complex junmai daiginjo with a silky, creamy texture, finishing with a subtle rosemary aroma. This is a unique, limited sake that will not last long on the shelves. 

The seven breweries roles in making the sake are as follows:

Lead Brewery: Yamawa Shuzoten
Rice Polishing: All Breweries
Rice Preparation (Soaking, Steaming, Cooling): Suminoe
Koji: Katsuyama
Shubo (Starter): Urakasumi
Moromi (Mash/Fermentation): Hakurakusei
Pressing: Koganesawa

Miyagi was ruled by the samurai clan Date (dah-teh), hence the name of this sake. 

This is an annual collaboration that showcases the pinnacle of each brewery's craftsmanship. After enjoying this edition we'll look forward to the next season and episode.
