We've searched high and low for dried shiitake from Japan these days, and we've found them! These are dried extra slow during the winter months so they develop extra umami. Use these dried shiitake for making dashiflavoring soups, and sauces. Use it in The Japanese Pantry's Pork Belly Kakuni! 

Simply rehydrate them in a bowl full of water. Once they've been rehydrated, they are also great to eat.
