Wife and husband team Akiko and Kiichi Hakuto work as the brewing manager and toji, respectively. The brewery is located in Wajima, and famous for its fishery. Her favorite aspect about sake-making is, “collaborating with microorganisms.” Enjoy an assertive bouquet of banana cream pie, grilled pineapple, and custard, followed by flavors of melon, and nutmeg. Try this fruity sake chilled or at room temperature with more delicate flavors like sashimi or a lightly dressed quinoa salad.

Hakuto sake is brewed with deep faith and great passion by the husband and wife team of Kiichi and Akiko Hakuto. The brewery is a small, family-run business in a remote but prized town in Japan. The town is Wajima, located on the tip of the Noto Peninsula in Ishikawa prefecture. Wajima is famous for “Wajima-nuri,” “nuri” being lacquerware. Wajima-nuri is hand-crafted using traditional methods passed down from generation to generation. The Hakuto’s make their sake with the same care and spirit as the makers of “Wajima-nuri.”
