This amber-hued kijoshu (aged-sake), has been aged for 8 years in wood. The result is a viscous and rich sake that has hints of dried fig, honey, cashews, and cardamom.
Much like a sherry, this is an ideal sipper to present for dessert. Kijoshu is unique, not only because it is aged but also because in the final stages of brewing, sake is added instead of water.
