In 1973, a group of sake brewers broke away from bigger breweries to establish Ichinokura, to make a sake that wasn’t recognized by the government (and therefore not taxed).
In true Ichinokura style, this sake is fresh and clean. Not your average junmai daiginjo that can smell like a bouquet of flowers, this sake has a slight hint of pear and smokiness in the aroma. This fresh sake was delicious alongside a plate of sashimi or ikura donburi at one of our favorite local izakayas, Kiraku, in Berkeley.
Ichinokura was established by four breweries, each of which had a 70 to 300 year history. Also known as Ace Brewery, Ichinokura was named to express their wish to become the number one micro brewery.
