This bottle is a Sake Gumi selection! It was featured in October 2022 "Experimentations in Wood". 

Hito To Ki” translates to “people and tree” as well as Hito Toki “a moment in time." The Japanese love a play on words. Brewed in cedar tanks, this Junmai is reminiscent of barrel-aged chardonnay without acidity and bitterness. Packed with umami, its rich mouthfeel satisfies. Brewing staff apprenticed at the cooperage [makers of barrels and casks] to learn the art of building cedar tanks. They hope to revive and support the lone cooperage remaining in Japan that can build such large cedar tanks. Crowd-sourced funding helped spread the word about this precious tradition and the cooper's skill. Coopers historically made tanks for many fermented beverages and food.
