An iconic condiment from Niigata prefecture, Kanzuri is made only with red chili peppers, yuzu, salt, and shio koji. The chilis are laid to rest in the snow after pickling for further fermenting – a process called yuki sarashi. A wonderful accompaniment for yakitori, soups, or ramen.
