Perhaps one of the silkiest karakuchi (dry) sakes we've had, this sake has notes of cooked rice, and candy cap mushrooms. Its light yellow hue pours beautifully in a glass, but also in a white ceramic cup. Much of the sturdiness is thanks to brewmaster Masahiro Nishigaki's long and low temperature cultivation of koji. The resulting flavors are deep with umami. We had this sake ice cold with pulled pork sandwiches after a hard day of manual labor, and it was a heavenly match.
