Using double the koji that is usually used for sake brewing, this sake is bursting with ripe bananas, dried apricots, savory figs, candy cap mushrooms and mango. Because 30% of this sake is comprised of koji the flavors exhibit a complexity akin to brandy in its long and broad finish, and have a unique amber hue.

While we enjoy this sake chilled on hot days, warming it up brings out cozy flavors of mushrooms and dried fruit.Β
