Koji Il Riso is an unpasteurized Japanese rice ale brewed in Italy. Yes, you read that correctly. Birrificio del Ducato, a brewery based in Roncole Verdi, a small village in Parma, Italy made this unique brew using Hitachino Nest's koji mold, along with barley malt, wheat, rice, and flavors of Japanese green tea and jasmine flowers. The result is hybrid between beer and sake. The black koji yields sour-citric flavors.
