Sake + Shochu Gumi

Ryuou Blue owes its unique expression to organic Yamada Nishiki rice grown in the Ryuou basin which is home to varying soil types and elevation, all featured with reverence by the brewer.   

This structured Junmai Daiginjo is sly and secretive, not giving itself away easily. The texture is tight, yet creamy, with bright minerality and purple plum on the palate. This is balanced by savory nuttiness throughout the palate and on the finish, reminding us of Mont Blanc. This is a joy to drink.

Ever the terroir nuts, Shiga's Matsuse Shuzo uses their Matsu No Tsukasa brand to showcase soil types, rice varieties, and the myriad other resources they have at their disposal to create high quality brews that are as fun to geek out on as they are to drink.
