This complex soy sauce has been aged for two years in a small brewery in Gobo City, Wakayama Prefecture, a prefecture known for salty delicacies like umeboshi (salted plum).
Mitsuboshi means "three stars" which appear on the bottle. Horikawaya Nomura brewery has been brewing soy sauce for 18 generations and still uses a wood fire to make their soy sauce.
