A seasonally-released sake brewing style, hiyaoroshi sake is brewed and bottled the previous winter season and aged through the next spring and summer to be released in the following winter. We're happy to offer this fleeting seasonal sake on our shelves, as Noguchi sakes are nothing if not always surprising and interesting!
This genshu (tank-strength) brew offers generous aromas of vanilla bean, mont blanc, spiced pear, and butter croissant. It has some slight bitterness on the palate and is quite compressed when served chilled – enjoy this sake slightly warm to open it wide up for your sumptuous winter pairings, bringing out caramel, strawberries, and custard. This would go great with umami-rich meats and fish, or even snacks like roasted nuts and cheese.
Naohiko Noguchi is a legend in the sake-making world. Working 70 years as a toji (brewmaster), he opened the Noguchi Naohiko Sake Institute in 2017 to further the craft of sake-making for future generations.
