This umami-ful tsuyu (dipping sauce made of mirin, soy sauce and dashi) is the ideal accompaniment to a bowl of soba, somen, or udon. Cold or warm, as you like! Use this versatile sauce for not only noodles, but it's also terrific when added to cold tofu, as a tempura dipping sauce, or to braise meats and vegetables.
For noodles, use one part tsuyu to 3 parts water.
