This nigori (unfiltered sake) is unique because it is a kimoto (brewed using naturally occurring lactic acid and yeasts) sake. Fitting because it is brewed by Daishichi Sake Brewery located in Fukushima Prefecture and known since 1752 for their rich, solid kimoto sakes.
As a nigori, this sake delivers. It is creamy with a hint of sweetness. But with a clean finish, slight effervescence, and hint of acidity, this sake is refreshing.
