A complex and endearing brew from Emishiki Shuzo. The aroma is quite subtle and reserved. We get koji, soft cheese, and cereal grain on the nose. The palate is generous with acidity, fresh, juicy, yet firm. Get ripe mango, wildflower honey, nectarines, and peaches. The dry finish is satisfying and refreshing, typical of Shiga sakes. Contemplate this crisp cornucopia while appreciating the woodland scene on the label. It reminds of the title sequence to Tonari no Totoro (My Neighbor Totoro). World peace seems more and more like a possibility with sake like this around.
