Junmai Ginjo + Ginjo

Ginjos require the use of highly polished rice with a seimaibuai of at least 60%. This means that 40% of the original rice grain is polished away. When this much of the outer layer is polished away, rice grains begin to show their delicate and fruity flavors typically present in ginjos. Ginjos are often enjoyed chilled with lighter foods such as vegetables or sea food.
