Sake and Shochu Gumi

This cuvee (blended) sake is made with eight different sakes including R2 (2020) Arabashiri, R3 (2021) Blue Label, H30 (2017) Kame Blue, H30 (2017) Kame Azolla, R1 (2019) Junmai Ginjo, R1 Raku (2019) T-157 mixed, R3 (2021) Omachi. Additionally, water from Mount Ibuki (which is comprised of limestone) was added for minerality and texture. Fantastically dry and uber-complex, this is a sophisticated and satisfying sipper any way you slice it!

Ever the terroir nuts, Shiga's Matsuse Shuzo uses their Matsu No Tsukasa brand to showcase soil types, rice varieties, and the myriad other resources they have at their disposal to create high quality brews that are as fun to geek out on as they are to drink.
