Sake and Shochu Gumi

This year's hiyaoroshi (fall sakes that are aged over the summer) from Shichi Hon Yari gives us a cornucopia of fall flavors including pear, banana bread, earthy persimmon, with an all spice finish. We especially enjoy the rich texture of this sake that satisfies with ample umami and refreshing acidity. The particularly hot and dry season yielded drier rice this year which resulted in sharper flavors like persimmon and lime.
