Sake and Shochu Gumi

Indulge yourself this holiday season with a taste of Komyo "Zenith" Junmai Daiginjo – the world's only sake made with 1% polished rice. We have the only bottle in the Bay Area!

So what does it mean to polish rice down to 1%? Takeshi Sato, the toji (head brewer) of Tatenokawa Brewery says that it takes 75 days to mill Dewasansan sake rice down to this single digit seimaibuai (rice polishing ratio).

In general, the more the rice is polished, the lighter and delicate the resulting sake. So it makes sense that this sake is ethereal and graceful – unlike any other sake out there. It has a hint of jasmine flower on the nose and a slight round sweetness on the palate. Sato describes this sake to have, "no impurities." Despite it being airy, and light, it maintains a structure and roundness.
