Dewanoyuki Shonai Bijin Kimoto Junmai Hiyaoroshi Sake (BTL 720ml)
Shonai Bijin ("Shonai beauty") is Dewanoyuki's fall hiyaoroshi from the Shonai region of Yamagata, brewed with the old-school kimoto method. The slow yeast starter results in notes of ripe banana, yogurt, and a hint of cheese on the nose, with creamy vanilla and a savory, nutty depth on the palate. It's smooth and round, with a savory aftertaste that's great with richer, oilier dishes.
Try it at room temperature or warm with filet mignon, cream stew, fried chicken, cheese fondue, or a spicy mapo tofu. Also great chilled!
Hiyaoroshi are sakes that have been pasteurized once in the winter, aged through the summer, and released in the fall without a second pasteurization. Hiyaoroshi are as fleeting as leaf peeping season, so get them before they are gone!
