Made using Yamadanishiki grown in Shiga prefecture, this “kijoshu” is made with sake replacing some of the water used for fermentation. This leaves more of the sugar that would normally be broken down by yeast and results in a sweet, dessert wine-like sake. Fruit and caramel flavors blend, with a lush, full-bodied mouthfeel.
