Sake and Shochu Gumi

If you've shopped our sake selection this year, (or even remember this distant Sakqueso), you will without a doubt know the fun and interesting brews coming from Shiga's Matsuse Shuzo. They're going to be in town for Sake Day 2022, and we feel so lucky to snag them a few days early and host them at our bar!

Blending is a technique practiced by many brewers, but Toji Keizou Ishida of Matsuse Sake Brewery takes it to the next level by combining vintages from different years. For this event, we will delve into the world of blending. Why do brewers blend? What are some conventional and non-conventional motives for blending? What are the senses and tools that a toji uses to come up with the perfect blend? How do they see blending evolving at their brewery in the future?

Join Ishida at our bar for the opportunity to taste through a special flight of four of Matsuse's sakes. Included in the flight is one of their new expressions Cuvée Isabel, a blend of various sake brews using different varieties of rice and yeast in their mashbills.
