Sake and Shochu Gumi

A super limited unpasteurized nama from Dassai's U.S. brewery in Hyde Park, New York. This sake uses Yamada Nishiki rice from Japan, and local New York water. Enjoy notes of anise, lemon, and a crisp mineral ending.

The brewery states:

Dassai Blue is named after the Japanese proverb which literally translates to "Although blue dye comes from the indigo plant, it is bluer than indigo." This means that the child exceeds the parent, with the idea of surpassing the Dassai made in Japan. We are not trying to reproduce the Japanese Dassai in New York, but to inherit the concept of Dassai "craft the best sake" and pursue the best that can be crafted in the environment of New York, USA."
