While we love a floral junmai daiginjo, we love this unique junmai daiginjo from Saiya Shuzo that has some earthy and herbal flavors accompanied by a silky texture. The brewery is known to use their own proprietary yeasts, and for releasing sakes that are undiluted and non-charcoal filtered, lending body and complexity to each sake they release. This sake is aged as a namachozo (aged unpasteurized, and pasteurized once a bottling). Enjoy notes of plum, peach, and herbs.
