Sake and Shochu Gumi

Known for their complex but subdued sakes, this junmai daiginjo from Sohomare Brewery has notes of lime and yogurt with a solid structure that expresses best at room temperature in a burgundy wine glass. Using a blend of yeasts 6, 7, and 1401, this kimoto has savory umami, and crisp acidity. Named "Tuxedo" for a dressed up style that's not floral, this sake is fit to pair with a wagyu filet or dab of caviar.
