Sake and Shochu Gumi

Lots of acid in this clean and balanced junmai daiginjo, with a tiny hint of effervescence. The brewery grows all of their own rice on premises, hoping to capture a unique terroir and locality to their brews. The master brewer is also a francophile, enjoying spending time in vineyards and adorning his sakes with French aesthetics.
