As the Director of Sake at Umami Mart, it's my pleasure to choose sakes for the shop, and every month for our Sake Gumi club. In addition, I wanted to create a "Top 5" category that features my favorite sakes of the season. From clean junmai ginjos to dark and juicy yamahai junmais, my selections differ in flavor profile, pairing capabilities and brewing regions. Sake can be enjoyed alone, but shines when paired with food – and these sakes are no exception. Please use my notes as a guide to pairing these sakes, but I also encourage you to have fun and try out your own pairings!
