On specs alone, this sake is intriguing. Using local, low-polish Hazuki Minori rice, this sake is juicy and full of white peach and luscious pears. The low polishing ration results in uber umami, and a long finish. Heightened acidity and a slight effervescence reminds us of fresh-squeezed orange juice.
