You'd never guess this elegant junmai daiginjo is made with Omachi rice, which is known to result in sakes that have bold and rich flavors. Instead this sake exhibits fruitier flavors such as fuji apples, and juicy peaches. A little Omachi sneaks in however, in the aroma – with hints of shiso and mint. Enjoy this sake chilled with lighter mediterranean flavors like fresh mozzerella, and sauteed branzino.
The brewery grows all of their own rice on premises, hoping to capture a unique terroir and locality to their brews. The master brewer is also a bit of a Francophile, enjoying spending time in vineyards and adorning his sakes with French aesthetics.
