This sake is made with flat-polished rice. What does that mean? It means that although the polishing ratio is at 53%, it actually drinks like a sake made with sake polished to 40%. So it'll drink more like a big, juicy daiginjo rather than a ginjo. The effervescence and rich texture screams "nama." Enjoy slightly chilled with rich dishes like pork or grilled tenderloin. 

Uses Ipponjime, a umami rich sake native to Niigata Prefecture.
