Made by WTO-certified Kuma shochu distiller Tsutsumi Shuzo, this Junmai sake-based bermutto aka "vermouth" is a delectable take on a classic European vermouth fortified with Kuma shochu (rice shochu made in Kumamoto prefecture). The full botanical list includes yomogi (Japanese mugwort), yuzu, kabosu (a high acid citrus fruit), sansho peppercorn, ume (Japanese green plum) and sweetened with Okinawa kokuto sugar. We get baking spice, brown sugar, stewed cherry, and woody vanilla balanced by a tart and bright umeshu-like acidity.
