Mother's Day

Nestled in attractively wrapped calligraphied paper, this yuuki (organic) style shoyu (soy sauce) has only soybeans, wheat, water (compare that to the myriad additives and preservatives in other shoyu brands), and is fermented for many weeks. The result is a pleasant and light balance of funkiness, salt, and sweetness. It has been reported there is a hint of citrus lurking in this shoyu as well. Use for sashimi, marinades, and for simmered dishes.
