Sake and Shochu Gumi

Tonburi are dried seeds from the tree summer cypress, kochia scoparia, a speciality of Akita prefecture. It is often called land caviar or field caviar. The seeds are used in Chinese medicine to help with hypertension, obesity, and urinary diseases. We love using this as a garnish to add an extra pop of texture to soba, mixed into natto, or on top of a cracker with gouda. Gluten-free and vegan friendly!

Marinate 2 tbsp of tonburi with 1 tbsp of soy sauce and 1 tbsp mirin for at least 30 min, drain and enjoy!

As seen on Kodoku no Gurume, tonburi mixed with shirasu (baby anchovies). Goro approved!
