Sake and Shochu Gumi

As seen on Shochu'sday!

Using 100% Beni Satsuma Imo, this is one of the few imo shochus available in the U.S. which uses imo koji, or koji inoculated directly onto the sweet potatoes instead of using rice (a more common practice). The result is a highly potato-forward drink, rustic and starchy, with ample notes of tobacco and doughy pancakes when enjoyed straight. Sodawari (cut with soda water) mellowed this shochu out, giving a dry context to the layered funkiness, more like sarsaparilla. A touch of lemon won't hurt either.
