If you are a daiginjo sake lover, you may have heard about Dassai Beyond – and have wondered, "What the hell does it taste like???"
There is very little disclosed about this sake; Asahi Brewery, makers of Dassai, simply say that this is "beyond Dassai 23." Huh?! It took them over 10 years to release Dassai Beyond, but they won't tell us what type of rice they use, nor do we know the rice polishing. They may have used a completely new sake-making technique but we don't know what exactly. So why would anyone buy this extravagant bottle?
Join us as we unravel the mystery of Dassai Beyond and taste it alongside Dassai 23. We think this is exactly as the brewery would want us to taste it.
