Yoko and Kayoko visited Kiuchi Brewery in 2016 so we're especially excited to host this event. Famed worldwide for their Hitachino brand of beers, Kiuchi started as a sake brewery in 1823 in Naka City in Ibaraki Prefecture.

Join us on February 24th for a brewery tour and tasting with Kiuchi brewers. We'll discuss the unique powers of koji in sake and beer making, with a guided tasted of the Kiuchi Koji Pack, including a rare sake (made with 100% koji!) and beer made with yellow koji.

What is koji? Koji is a mold used to make sake, shochu, soy sauce, mirin, and miso. In sake and beer-making, koji breaks down the rice starch into enzymes for saccharification (the process of making glucose). Then, the added yeast is able to ferment the glucose into alcohol. It is Japan's miracle mold!
