Kanzuri is a spicy condiment from Niigata prefecture in Japan. The togarashi chilis are harvested then buried in snow to ferment. Then it is mixed with chilis, yuzu, koji, and salt and aged for a few years. Amazing!

Add to pizza, shabu-shabu, gyoza dumplings, or eggs.
