This bottle is a Sake Gumi selection! It was featured in June 2022 "Sakqueso!"

On the bottle is Tatenyan, a stray cat that became a mainstay mascot after the brewery took him in. This junmai daiginjo is fresh, with aromas of green apple, stone fruit skin, fresh herbs with a hint of tingly bitterness in the end. Keisuke Kawana who is part of the manufacturing team recommends a cheese that is rich and milky in flavor, for example Caprice de Dieu, or ricotta to contrast the fresh Tatenyan. We loved how the milky and minerally cow’s milk cheese Cottonbell from Boxcarr in North Carolina brought out notes of cracked pepper and honeydew in the chilled sake.
